NPD/R&D Manager - Food Technology | Health Focused FMCG Brand

They manufacture and sell various types of pasta with benefits such as containing plant-based protein, free of soy, gluten and artificial colours, 100% vegan etc. and their products are Kosher certified. Their website also provides varieties of guilt-free pasta recipes which will help parents un-junk their kids? food choices.
Founded by a team of three veteran entrepreneurs, our client is headquartered in Mumbai. They have raised a total of $1.3M in funding over 2 rounds.
As a NPD/ R&D Manager - Food Technology, you will be responsible for New Product Development from scratch to finish right from category mapping to understanding the gaps in the market, need of consumers, taste preferences, label reading, liaising and finalizing 3rd party manufacturers, QA/QC at 3rd party manufacturer warehouse, and monitoring parameters as per FSSAI and other related laws.
What you will do:
- Applying scientific and engineering principles in R&D, market research, recipe optimization, regulatory, production technology (pilot & plant), packaging and processing
- New product development in healthy nutrition rich foods and categories malted drinks, pasta, sauces, instant noodles, flours experience an added advantage
- Conducting shelf life studies on new products, flavour, texture and color measurement, rheological and physiochemical property evaluation, nutritional composition analyses and microbiological safety
- Being responsible for food sensory evaluations for new/ existing product items and regulatory approvals
- Developing and creating specification sheets for all new products, label reviews and health claims
- Evaluating and recommending alternate ingredients used in existing products
- Being responsible for setting up lab setup & large commercial production process facility for various food products
- Handling QA/QC check of all finished products post dispatch and pre inward at 3rd party manufacturer will involve extensive travelling
What you need to have:
- M.Sc. In Food Technology or B.Tech in Food Technology with atleast 5 yrs of experience in R&D and developing various food products in categories - malted drinks, pasta, sauces, instant noodles, flours experience an added advantage
- Experience in scaling up from R&D scale to large commercial production facility
