To plan, organize, direct and control the operations of the designated outlet, to ensure smooth operations, sales & profitability and any other duties as may be assigned by the Management to achieve business objectives and ensure high level of quality in products and services.

Accountable to the Management for the profitability of the assigned outlet.

SALES & PERFORMANCE:

- Manage the outlet to achieve assigned sales target

- Ensure that the sales strategy is understood & implemented smoothly by the team

- Review sales numbers on a daily, weekly and monthly basis with outlet team

- Track and enhance APC/ table turnovers

INVENTORY MANAGEMENT & CONTROL:

- Ensure right quantity of Food, Liquor & other materials are ordered (as per the defined par stock and to discuss the same with the head chef) and receiving done as per standard quality specifications

- Ensure correct storage procedures are followed

- Ensure inventories are taken at set frequency and required

FINANCE & ACCOUNTING :

- Prepare an annual outlet operating budget

- Monitor the financial performance of outlet

- Check that all financial records and documents are properly prepared and filed

- Aim to maximize profitability of the outlet by increasing turnover (revenue and covers) as a priority and controlling cost

- Ensure P&L to be reviewed monthly

- Ensure all allocated costs are within budget

- Ensure MIS for Royalty pay outs and payments (in case of a Franchised Outlet)

- Ensure Financial Audits are conducted.

OPERATIONS:

- Ensure excellent service is delivered to all Guests during their visits

- Ensure all Guest Feedback and complaints are handled as per the standard procedures

- Ensure adherence of opening and closing process of the outlet

F&B CONTROLS:

- Work in conjunction with the F&B controls for ensuring budget of Food Cost and Liquor Cost

- Minimize Wastage and Pilferage

HUMAN RESOURCE:

- Recruit outlet staff in conjunction with the Human Resource Department

- Ensure proper recording & maintenance of Employee data

- Ensure proper training is provided for staff with appropriate certification

- Ensure constant learning for staff and timely training reviews & feedback

- Explain the code of conduct to the staff and any policies if applicable

- Motivate staff through Rewards & Recognition and provide complete guidance & support

- Handle and resolve Employee grievance

- Coordinate and facilitate annual appraisals for staff with the HO

- Handle disciplinary actions and staff termination, if any in coordination with the HO

- Conduct Exit Interviews and minimize attrition

MARKETING:

- Ensure proper coordination with the HO for various marketing and promotional activities

- Ensure that marketing plans are well executed

- Ensure proper handling of media and PR

- Promote the brand locally

- Bring business/corporate deals

ADMINISTRATIVE :

- Ensure proper functioning and maintenance of equipment and facilities

- Ensure proper vendor tie ups and management

- Ensure all reports are prepared and shared timely with the management/HO

- External Party Liaison

AUDITS & REVIEWS:

- Ensure all Mystery Customer Audit Scores are 100%

- Carry out Customer Experience Audits and Internal Process Reviews as per the frequency specified and ensure minimum scores achieved
